"Wara" is a tare tsuyu made by adding flavorful dashi stock, which is made by adding carefully selected ingredients to "Nagara", which has a mellow richness unique to tamari.
Unglazed sweetfish from the Nagara River and dried shiitake mushrooms from Gifu Prefecture are added to the dashi stock made from bonito and use clear underground water from the Nagara River.
The Wara River, which flows through Gifu, is known as a famous sweetfish production area. Sweetfish caught in the Wara River, where high-quality moss grows, is said to smell like watermelon. “Wara”, a tamari tsuyu made with sweetfish soup, is named after the Wara River. Use water to mix the sauce 4-5 times for the perfect dipping sauce consistency for somen noodles, or mix 2-3 times for adding to simmered dishes.
